Baked grapefruit


Have you ever heard of baking a grapefruit? I hadn't until just recently and it seemed a weird thing to do with a fruit with such a fresh, light flavor like a grapefruit. However, I figured it was worth a try since people were raving about it on Pinterest.

Step by step:

Slice a grapefruit in half
Slice off the bottom of each half so it can sit on a baking tray without wobbling
Sprinkle toppings (in my case: brown sugar, cinnamon, nutmeg, and cloves)
Bake at 375 degrees Fahrenheit for 15 minutes
Remove, let cool, and dig in!


While browsing recipes, I noted a variety of toppings for the grapefruit. Coconut, cinnamon, honey, maple syrup, granola, brown sugar, so many options! I decided that I would just mix and match, and add a few of my own, so I ended up using brown sugar, cinnamon, nutmeg, and cloves. I used a pinch of each, but the cloves were definitely the most overwhelming flavor (and scent, oh I wish I could purvey the smell of my baked grapefruit to you! So amazing! Like a fresh autumn!). I just love the scent of citrus and cloves.


With the toppings I used this snack seemed like part of a perfect fall breakfast, and I will definitely be making this on a fall morning, but I think I'll experiment with other options too for a less seasonal flavor. Maybe something that doesn't mask the grapefruit flavor as much.

Oranges and cloves


I can't get the smell of oranges and cloves off my hands, not that I'm complaining! The house smells delicious tonight, thanks to the combination of oranges and cloves. It's really such a fantastic smell, embodies fall and winter perfectly. 

In case you have never made them before, they are super simple. Basically you push cloves into the peel of an orange. It does help to punch holes into the oranges where you are going to place the cloves first with a needle, pencil tip, whatever is convenient. That's it!

Sweet potato cupcakes

I have a new favorite recipe for fall/winter sweets! Actually, this is pretty much tied with my recipe for apple pie cookies, but it definitely wins for cupcakes.


I roughly followed the recipe found here, but this is what actually went into these cupcakes:

1 cup brown sugar
½ cup unsalted butter, softened
½ cup pureed sweet potato
2 eggs
1 tsp vanilla
1 cup white whole wheat flour
1 tsp baking soda
½ tsp salt
½ tsp ground cinnamon

I combined all the ingredients (not in any particular order) then baked them for 15 minutes at 375 degrees. I topped them with my roommate's cream cheese frosting recipe:

8 oz plain cream cheese
1 cup white sugar
1/2 tsp vanilla

These ingredients were blended until evenly combined, and spread on the cupcakes. I sprinkled a little more cinnamon on top and then, finally, enjoyed my cupcakes!

...I wanted to snap a few last pictures of the beautiful leaves on the trees and on the ground. It's supposed to snow tonight (up to a foot by the end of tomorrow!), and that will be the last of many of these leaves.



On the bright side, I get to wear my cute snow boots tomorrow!

Hair flowers for fall

I am loving the idea of hair flowers worn in the colder months, especially in appropriate colors. I know that this is something typically associated with spring and summer, but when do you need flowers more than when they are rare in nature?

I'm wearing my own personal hair flower today. I love it so much that i own it in gunmetal too. It's from Eddie Bauer but I don't think they carry them anymore.

Spaghetti squash

Spaghetti squash on the menu tonight!

Super easy to make! I cut the spaghetti squash in half, scooped out the seeds, placed both halves face down on a plate, and microwaved it for 10 minutes. I really love it with butter and brown sugar, but I've heard butter and salt is good too.

Happiness in small places

Happy fall, officially! I'm celebrating with new mini items: a little pumpkin and three tiny candles.

The pumpkin is a perfect little decoration and the Slatkin & Co. candles smell heavenly. Caramel Apple, Sweet Cinnamon Pumpkin, and Woodland Berry scented. Yum!

Autumn

Despite the season still officially summer until Friday, fall has arrived in my mind. My day was full of little signs telling my five senses that the season is changing.
