White bean artichoke salad

I was inspired by this

delicious looking sandwich from Martha Stewart (recipe here) to try the combo of white beans and marinated artichokes. However, I wasn't quite feeling the sandwich thing, I decided to turn it into a salad. 


So here's my salad! 

Ingredients:

Great Northern beans
Marinated artichokes
Spinach
Garlic
Salt
Pepper

I rinsed the beans, chopped the artichokes a little smaller, washed and tore up the spinach, and topped it all with garlic, salt, and pepper.


Between the white beans and marinated artichokes, the flavor combination is perfect. It's a great light salad for this warmer weather, and it didn't even need a dressing (the marinade from the artichokes seems to be enough). So good, and it's for lunch tomorrow again! That's why it's in Tupperware :)

Flower salad


While shopping at Whole Foods the other night with the Mama, I found a little container of edible flowers! They were so pretty, I couldn't resist! I've always wanted to try eating flowers (more for the idea of it than anything else) but never knew which ones I could safely eat and which ones would kill me or something like that. Anyways, this packet made it pretty clear that I could eat these 'edible flowers,' so we put them in a salad with spinach, strawberries, and an orange honey dressing.


 Though they were pretty, they were certainly not flavorful. The parts of each flower that contained the organs was usually bitter, and the petals were tasteless at best. So maybe not a repeat for functionality, but still made for a great decoration!

Bleu cheese pear salad

Now that Christmas is over, it is time to stop eating EVERYTHING in sight. Time to be healthy again! After a day shopping the after-Christmas sales, it was time for some good food! Added some lettuce to a side my family had last week with dinner and I ended up with a super delicious salad. 


This salad included:

Romaine lettuce
Pear
Bleu cheese crumbles
Feta cheese crumbles
Dried cranberries
Almond slices

On top was poured a delicious vinaigrette of one part apple cider vinegar to three parts olive oil, a tiny bit of mayonnaise, a dash of mustard powder, and a pinch of salt.
