Apple Pie Cookies

I was playing around with a recipe for apple cinnamon cookies and was in the middle of preparing them (with my inherited KitchenAid mixer pictured below :) ) when I realized I didn't have most of the ingredients called for. Instead, I decided to wing it and work with what I had. I made with cookies that taste like apple pie!

Here's the recipe I ended up using:

2 gala apples diced
2.5 cups of flour, sifted
1 tsp. salt
1 cup brown sugar
1 cup white sugar
3/4 cup butter
2 eggs

Cream the butter and sugar, add the eggs. Mix the dry ingredients. Combine with diced apples. Bake 10-15 minutes at 350 degrees Fahrenheit, until brown around the edges.

Pink cake

Today my Mama made me her traditional Pink Cake, the greatest combination if cake and frosting ever. Funfetti cake and strawberry frosting. So yummy and so cute!

Tofu recipe

As a vegetarian, I am always looking for great tofu recipes. I combined a few ideas and created this!

Tofu (marinated in equal parts soy sauce and sugar, with garlic added to taste), white rice, and Craisins. Yum!

Happiness in small places

Happy fall, officially! I'm celebrating with new mini items: a little pumpkin and three tiny candles.

The pumpkin is a perfect little decoration and the Slatkin & Co. candles smell heavenly. Caramel Apple, Sweet Cinnamon Pumpkin, and Woodland Berry scented. Yum!

Crocheted flowers

Today, the day of two midterms, has finally come to a close! And in order to celebrate and de-stress, I am crocheting! I love little projects like this, with nearly instant satisfaction.

I can make these little flowers in just a matter of minutes. I love to put them on a bobby pin and wear them in my hair or sew them onto a hat, scarf or headband.

Autumn

Despite the season still officially summer until Friday, fall has arrived in my mind. My day was full of little signs telling my five senses that the season is changing.

Colorado sunshine

Absolutely loving this Colorado sun! After a week of almost daily rain (plus my being sick to match the weather), this sunshine is much needed. Planning to do my studying outdoors and maybe a nice early evening bike ride.

New portabello recipe!

Finally got home from the CU vs. CSU game (go CU!) and I was craving real food. Decided to try a recipe I saw in a Real Simple over the summer.

This is a toasted flour tortilla with a portabello mushroom and melted pepper jack cheese, topped with spinach, salt, and pepper. Super yummy, and it hit the spot perfectly!

Koi and turtle pond

Between my TA meeting and my anthropology recitation I usually have about a half hour break to myself. In previous weeks, this time has been occupied with last minute cramming for the quizzes that are so popular in my recitation. This week, however, my day was quiz free! I spent that time by the pond on one end of campus, one of my new favorite spots. It is filled with koi of all different colors and cute little turtles that sun themselves and occasionally swim around. I love watching them swim around together, so peaceful.
