Fancy breakfast sandwich

Had a fancy breakfast this morning (well, it was breakfast for dinner). Open-faced sandwich inspired by this recipe

Toasted whole wheat bread

Asparagus sauteed in butter and salt

Sliced hard-boiled egg

Onions sauteed in butter until slightly brown

Salt & pepper

It was really great! I just wish I woke up early enough in the mornings to actually have this for breakfast!

Blueberry cream cheese rolls

Tried out a new recipe tonight, from here. All I needed was Pillsbury Crescent rolls, cream cheese, and blueberries.

I unrolled the Crescent rolls and spread them out on a baking sheet, adding a small spoonful of cream cheese to the center.

I placed a few blueberries on each mound of cream cheese (in an unnecessary, obsessive-compulsive pattern).

I rolled up the Crescent rolls and pinched shut the seams.

I baked them at 375 degrees Fahrenheit for about 9 minutes (until they were golden brown).

They weren't as sweet as I was expecting (the rolls were somewhat salty and the blueberries didn't do much to counteract that), but they would be perfect for a breakfast when I wouldn't be able to handle anything very sweet.

Not your average fried egg

I'll probably never make a fried egg the same, ever again!

Saw this, and had to try it.

These are also cute too!

Blueberry surprise french toast casserole

Thought I'd share one of my absolute favorite breakfasts ever. Technically, it is called a blueberry surprise french toast casserole but it is referred to as the 'blueberry poufait' in my family.

Combine the blueberries, cream cheese, and bread cubes.

Combine the eggs, milk, and syrup.

Pour the egg mixture over the bread mixture.

It's so delicious I couldn't even snap a picture of it before it was halfway gone!

Breakfast smoothies

I've gotten bored lately with the same old piece of toast and slice of cheese (I'm hypoglycemic so I eat TONS of protein) in the morning. In order to change it up, I have started making smoothies for breakfast. I buy frozen fruit and vanilla or plain fat-free yogurt and either just combine them or add a little protein powder if I feel like I need it. This feels like a much better breakfast than what I ordinarily eat, and is light enough that I enjoy it after working out in the mornings.

This morning my smoothie (strawberries, peaches, and vanilla yogurt) was especially thick, so I poured it into a bowl and added some granola. Extra yum!

Cinnamon banana bites

In the mood for some late-night comfort food, I got a bit creative and made cinnamon banana bites! I've been making banana cinnamon pancakes for a while, and these are basically just mini, bite-sized versions of them.

First I sliced a banana, slightly at an angle just cause I think it's more fun.

Then I added some cinnamon to pancake batter (I cheated and used the "Just add water!" kind). I LOVE cinnamon so I added a lot, if you try this then just do it to taste.

I submerged the banana slices in the cinnamon-y batter and transferred them to a buttered pan.

I cooked them on medium until slightly browned, then flipped them and cooked the other side. Essentially the same as cooking a pancake except it took slightly less time as they are smaller.

Finished, super yummy! Probably best served with syrup. In the future I'd like to try plain pancake batter with chocolate chips, or dipping the final product in melted chocolate.

Arepas

Made arepas for breakfast, roughly the Hispanic equivalent of pancakes. Growing up in a half-Hispanic household, they were my favorite breakfasts. Now I can make them for myself whenever I want!

Traditionally they are prepared in a more complicated way involving tools I don't have, but this way that I learned from my mother is super easy.

Combine "Masarepa" (flour for arepas, found at Hispanic supermarkets) and water until it is possible to form little balls by hand. Flatten the balls into patties and cook on medium in a pan coated with butter. Cook both sides until slightly hardened (they won't change color much), then remove and top with butter, salt, and the cheese of your choice. Enjoy!
